What’s easier than a sheet pan? Using sheet pan leftovers in pasta. When I had a ton of my Gruyere Chicken Sausage and Veggie Sheet Pan dinner leftover the other night, I decided to toss it with a mix of spaghetti noodles, diced tomatoes, basil and mozzarella cheese. It seriously took 10 minutes end to end and was fantastic. I love using Banza noodles to bump up my protein intake, but you don’t have to! I had some leftover roasted sweet potatoes I decided to add into this mix as well and it was delicious, so if you have any extra cooked veggies hanging out in the fridge looking for a place to go, this is the pasta for that!
Ingredients:
Leftover Gruyere Chicken Sausage and Veggie Sheet Pan, sausages chopped
16 oz spaghetti noodles (use Banza noodles for added protein)
1 can diced tomatoes, drained
1/4 C sliced basil
1T red pepper flakes
1/2 C mozzarella cheese
Directions:
- Cook pasta according to directions.
- Drain pasta and return to the pot with diced tomatoes and chopped sheet pan veggies and sausage.
- Simmer on low, stirring occasionally for about 2 minutes until it’s warmed through.
- Toss with red pepper flakes, cheese and basil and serve.
