Since I started tracking my macros I have ground turkey for breakfast every single day. It always makes it into my morning meal in some form or another thanks to its high protein and low fat content. Plus I love how it easily picks up other flavors! One of the things I really missed after going off of AIP were the delicious compliant pork breakfast sausages I had found. They had so much flavor- but they were also packed with fat. One day it hit me- why don’t I try to make my ground turkey taste like a maple breakfast sausage?
Because I prep all my breakfast turkey for the week at once, I usually do 2 pounds and cook it all up at once. You can use fresh herbs or dried- I’ve done both! As with most of my recipes, measurements don’t really need to be exact. Feel free to adjust this to flavors you like the best. I’ve even added 1/2 teaspoon of nutmeg on a few occasions! I keep the turkey in loose form for ease of measuring, but if you want to you can form these into patties and cook them in the oven or a skillet. That would makes life easier if you want to make breakfast sandwiches or have your servings pre measured. Otherwise you can be lazy like me and just toss them into an egg scramble. They also freeze well.

2 lbs ground turkey
2 T maple syrup
2t dried sage
1/2t garlic powder
1t black pepper
2t fennel seeds
- In large bowl, thoroughly combine all ingredients using your hands.
- Spray large frying pan with nonstick oil.
- Over medium heat, cook turkey until no longer pink, approximately 5 minutes.
- Keeps in fridge for up to a week!
